Byron Bay Bloom

Byron Bay Bloom

If Byron Bay were a cocktail, it would shimmer like a wave, smell faintly of lemon trees and salt air, and taste like sunshine bottled with a twist of gin. Enter the Byron Bay Bloom — a spritz that captures the essence of Australia’s most laid-back coastal haven.

✨ The Lore

Legend has it, the Byron Bay Bloom was first mixed by a seaside bartender who wanted to bottle the colours of the bay at dusk — the indigo sea, the golden sun, and the green of the coastal mint. He poured Ink Gin, the spirit known for its colour-changing magic, with a splash of Limoncello to mimic the golden glow of a Byron sunset.

When the citrus hit the gin, the drink bloomed from deep ocean blue to a soft lavender — a little alchemy in a glass. Locals say he raised the first glass to the sea and declared, “Here’s to sunshine you can sip.”

Since then, it’s become a quiet favourite for those who believe every hour should feel like golden hour.

🍋 The Recipe

Ingredients:

  • 45ml Ink Gin
  • 30ml Limoncello
  • 90ml soda water (or tonic for extra bite)
  • Fresh mint leaves
  • Lemon wheel (for garnish)
  • Ice

Method:

  1. Fill a large wine or spritz glass with ice.
  2. Pour in the Ink Gin and Limoncello.
  3. Top with soda water and give it a gentle stir.
  4. Garnish with a fresh lemon wheel and a sprig of mint.
  5. Watch the colour bloom — from ocean blue to soft lilac — and raise your glass to brighter days.

🌿 Serving Tip

Best served at golden hour, when the sky blushes and the air turns to gold. Pair it with light bites — grilled prawns, lemon crostini, or a simple cheese board.
