Ingredients
- 60ml White Rum
- 30ml Coconut Cream (or coconut milk for a lighter version)
- 20ml Simple Syrup (adjust to taste)
- 1 Lime, cut into wedges
- 6–8 Mint Leaves
- Club soda
- Ice
- Mint sprig + lime wheel, for garnish
Instructions
- Muddle: In a glass, muddle the lime wedges and mint leaves with simple syrup.
- Add coconut & rum: Pour in the coconut cream and rum. Stir gently to combine.
- Ice & top: Fill the glass with ice, then top with club soda. Stir lightly.
