Raspberry Collins

A bright, berry twist on the classic Tom Collins — perfect for spring.

Ingredients (1 serve):

  • 50ml gin
  • 25ml fresh lemon juice
  • 15ml simple syrup (1:1 sugar & water)
  • 4–5 fresh raspberries (plus extra for garnish)
  • Soda water (to top)

Method:

  1. In a shaker, muddle raspberries with lemon juice and syrup.
  2. Add gin and fill shaker with ice. Shake briefly.
  3. Double strain into a tall Collins glass over fresh ice.
  4. Top with soda water and give a gentle stir.

Garnish:

  • Lemon wheel + fresh raspberries on a cocktail pick.
  • Optional: sprig of mint for extra freshness.
