Ingredients (1 serve):
- 50ml gin
- 25ml fresh lemon juice
- 15ml simple syrup (1:1 sugar & water)
- 4–5 fresh raspberries (plus extra for garnish)
- Soda water (to top)
Method:
- In a shaker, muddle raspberries with lemon juice and syrup.
- Add gin and fill shaker with ice. Shake briefly.
- Double strain into a tall Collins glass over fresh ice.
- Top with soda water and give a gentle stir.
Garnish:
- Lemon wheel + fresh raspberries on a cocktail pick.
